Mom's Polpette:
You can use as a base any cooked meat, that you should then cut into tiny tiny pieces: chicken, minced beef, turkey...
Then add a choice of thinly chopped ham, parma ham, mortadella, abundant grated parmesan, a whole egg (1 egg is enough for 4/5 people), nutmeg, a touch of ginger powder, a boiled and squashed potato, parsley, salt & pepper.
Mix the ingredients and then make the little balls by hand. Flour the meatballs and then fry them in half a centimetre of olive oil.
Enjoy with mixed vegetables' salad.
